New Year’s Take-out Cooking Instructions


We recommend lining sheet pans with baking parchment and nonstick spray for easy cleaning

Appetizers

Blini with Caviar: Bake the Blini for just 1 minute at 350-400 degrees until warm.  Put on platter, top with a dollop of crème fraiche, a small spoon of caviar and chive

Foie Gras PB&J: Bake the toasts for 5-7 minutes at 350-400 degrees until hot and a little crispy.  Let sit 1 minute before spreading with a thick layer of the Foie Gras Mousse and a small spoon of lingonberry.  Sprinkle with a little parsley.

Crab Cakes (pre-seared): Bake pre seared cakes at 350-400 degrees for 6-8 minutes on sheet pan until hot.  Serve with Dipping sauce on top or on the side.

Grilled Thai Marinated Prawns (pre-seared): Bake at 350 – 400 degrees for 6-8 minutes on sheet pan until hot.  Put on platter, drizzle with pan juices and serve with Red Curry Coconut Dipping Sauce on the side.

Mini Wellingtons: Bake at 400 degrees for 12-15 minutes on sheet pan until past golden brown.  Let sit 5 minutes before serving with horseradish sauce on the side.

Brisket Empanadas (Par-Fried): Bake at 350-400 degrees for 8-10 minutes on sheet pan until hot.  Serve with Salsa Verde Sauce on the side.

Brie, Pear and Almond Phyllo Pouch: Bake at 350-400 degrees for 8-10 minutes on sheet pan until golden brown and hot.  Serve with the Mango Jalapeño Sauce on the side.

Vegetarian Risotto 
Cakes (Pre-Seared): Bake pre seared cakes at 350-400 degrees for 7-9 minutes on sheet pan until hot.  Serve with Dipping sauce on top or on the side.

Cheesy Bread: Bake at 350 – 400 degrees for 7-10 minutes until well browned and cheese very melty on sheet pan.  If you like extra melty microwave uncovered for 2 minutes before putting in oven.  Serve on rimmed platter covered with the oil, vinegar and crushed red chilies.

Entrees

Filet Mignon Stroganoff:  Warm up a small pot of water.  Warm the cream sauce and Mushrooms in another small pot or skillet over medium low until hot.  Drop the pasta into the water until just warm.  Drain, add to the cream and mushrooms, add the filet and stir until well incorporated and serve.

Rack of Lamb (pre-seared): Let meat sit at room temperature 30 minutes.  Cook in 350-degree oven for 10-12 minutes until meat is 130 degrees for med. rare. 2 min. more for medium, 2 min more for med well, and 2 min more for well.  Slice along the bone to make individual lollipops. Drizzle with Dijon aioli, and top with nuts. 

House Smoked Cajun Spice Cured Salmon:  Serve at room temperature with the Creole Sauce on the side.

Sides

Roasted Brussels Sprouts: Roast the Brussels sprouts for 15 minutes at 350-400 degrees until hot.  Top with the bacon and Blue Cheese and continue to bake 5 more minutes until hot and melty.  Drizzle with the Balsamic Glaze and serve.

Macaroni and Cheese: Pour the ½ and ½ in oven-proof casserole dish.  Add the Macaroni and Cheese.  Cover with foil and bake at 350 Degrees for 20-30 minutes until hot.  Unwrap, top with cheese and optional breadcrumbs and bake 3-5 minutes more until melted and breadcrumbs are nicely browned.

Romaine Salad: Toss the greens with the well stirred dressing.  Sprinkle with the Fennel, Nuts and Blue Cheese.  Top with the Poached Pear Fans.

Shrimp Bisque Soup: Heat in stainless pot on medium low stirring as needed until hot.  Be careful not to over cook or the ground shrimp may get tough
